Tony’s Tacos is a fast-growing restaurant brand known for delivering high-quality food, strong culture, and an exceptional guest experience. As we continue to expand across Long Island and beyond, we are looking for an experienced operations leader to help scale the company.

The Chief Operating Officer will be responsible for overseeing restaurant operations across all locations, building operational systems, developing leaders, and supporting the company’s expansion strategy.

This role requires a highly hands-on leader who thrives in fast-paced environments and has experience managing multi-unit restaurant operations.

Responsibilities

Multi-Unit Operations Leadership

  • Oversee daily operations across all restaurant locations
  • Ensure stores are meeting standards for service, food quality, cleanliness, and speed
  • Support and develop store managers and area managers
  • Drive operational consistency across locations

Leadership Development

  • Recruit, train, and mentor restaurant managers and leadership teams
  • Build a strong management pipeline for future store growth
  • Develop training programs and leadership development initiatives

New Store Openings

  • Lead operational planning and execution of new restaurant openings
  • Build and execute store opening playbooks
  • Support hiring, training, and operational setup for new locations

Operational Systems

  • Develop and implement scalable operational systems and processes
  • Improve labor efficiency, food cost management, and operational performance
  • Create and monitor key performance indicators (KPIs)

Financial Performance

  • Monitor and improve store profitability
  • Analyze labor, food cost, and operational efficiency
  • Work with leadership to optimize unit economics

Culture & Standards

  • Maintain and reinforce Tony’s Tacos culture and service standards
  • Ensure strong team engagement and accountability
  • Foster a high-performance environment focused on growth and excellence

Qualifications

  • 15+ years of restaurant operations experience
  • Experience managing multiple restaurant locations (25+ preferred)
  • Proven experience leading and developing restaurant managers
  • Experience supporting new store openings
  • Strong understanding of restaurant financials, labor management, and food cost
  • Ability to build and implement operational systems
  • Strong leadership, communication, and organizational skills

Preferred:

  • Fast casual or quick service restaurant experience
  • Experience scaling growing restaurant brands

Compensation

  • Salary: Starting at $130,000 – $160,000
  • Performance Bonus: Based on company and operational performance
  • Opportunity to grow with a rapidly expanding restaurant brand

Location

Long Island, NY

Frequent travel between restaurant locations required.
